What recipe do you use for your marshmallow fondant?
I made my sister's wedding cake and am afraid to attempt another one because I just iced it and it took me SO long to get it to look smooth. Fondant probably would have been easier, but I hear it's gross...so I've been afraid to try it.
Dear Nancy, I use a marshmallow foondant recipe that I got at CakesMakeEasy.coom. It really tastes good and is very easy to work with. This site has a lot of helps for us novice cake decorators and gives step by step instructions. Another helpful site is whatscookingamerica.net. You can ask a question and Peggy answers. She even has pictures showing each step in using rolled fondant. If you can't find the recipe and need it from me with directions just contact me back and I will share. I just think these other sites are more helpful than I could be. They really helped me. Jane
Jane, I really enjoyed your Enrichment presentation up in Logan several weeks ago (Minda's friend). I'd like to make a fancy cake for my newborn daughters baby blessing lunch. Could you remind me again how far in advance I can make the fondant and then just create it the day of.. also the cake? do they freeze okay? Thanks, Camille Pedersen

There was a mistake with the website, it should be www.cakesmadeeasy.com or just look up marshmallow fondant recipe on google. You can make the fondant a couple of days in advance and make sure that it is completely airtight. It will harden some, just put it covered in the microwave for 10-12 seconds to soften it. Then knead as usual.
Another note for Camille, You can freeze your cake but just make sure it is covered with two or three layers of plastic wrap and then is mostly thawed before you frost and cover with fondant. Good luck and have fun with it.I'd love to see a picture too:) Jane Gunnell

I started making wedding cakes in 2004 with the first one for my daughter's wedding. I have since created more than 45 wedding cakes,plus many for birthdays and other occasions, mostly for nieces and nephews, but also a few for friends and acquaintances. I haven't been making many cakes the past 4 years because I am now working full time at doTERRA International as a Mentor/Trainer in Member Services..This doesn't give me much time for making cakes. My daughter-in-law helped me set up this blog so future clients could see photos of some of my wedding cakes. I am willing to share the tips and things I have learned with anyone interested. I am not an expert; just someone who wanted to learn and help family and friends save money.
